Good starter board?

I'm relatively new to linux, and I want to buy and play around
with a starter board that will cause me the least trouble as far
as linux is concerned. 

My requirements are fairly basic: I need a few timers and 64 DIO
lines. Some analog inputs and outputs would be nice, but are not
strictly necessary. I'm looking for something under $500. 

I'm going to be using c with the applicable DAQ libraries rather
than Labview. Good documentation and examples are important for
me.

Any suggestions?
